Amaranth is a grain, similiar to quinoa, but a smaller grain. Amaranth is a great source of protein, fiber, manganese, magnesium, phosphorus and iron. It helps keep your digestive system regulated, build your strength, and reduce the risk of fracture or broken bones.
Many uses of amaranth include cooking like grits, breading fish or chicken, using as bread crumbs and in soups and stews. Fresh amaranth provided may also be dried and stored for winter usage. Prepare by stripping seed from stems. 4 oz deli container, keep refridgerated or dry.
